Suggested use: For caviar connoisseurs, sevruga caviar is a real treat. Small-medium pearlescent beads have a distinct flavor that is unique to this type.
Those who are familiar with the category and product are more likely to request sevruga. Sevruga caviar can be recommended as an aperitif for a small group or an exclusive event for a few select guests due to its high price. It’s a great alternative for a high end restaurant or a wine bar.
Note: Traditionally, sevruga caviar is graded according to size and color. The more valuable the caviar, the larger and lighter the grains. Furthermore, due to the scarcity of true Sevruga (Acipenser Stellatus), caviar obtained from Sterlet (Acipenser Ruthenus) is incorrectly marketed and sold as Sevruga or as a substitute. Mislabeling is an illegal and widespread practice. Because of the difference in species, there will be a significant difference in taste, texture, color, and price. Lower grades of Sevruga and Sterlet caviar are similar, but neither Sevruga nor Sterlet will produce golden shades of caviar. Be cautious when purchasing “golden Sevruga or Sterlet.”
Sevruga is one of the most abundant members of the sturgeon family in the world’s caviar supply. In comparison to its larger relatives, such as Osetra or Beluga, this fish is quite small, reaching up to 2 m in length and weighing up to 80 kg. A long and narrow snout with five small, moustache-like barbels near the mouth emphasizes the Sevruga sturgeon’s slender shape. Sevruga has a shorter lifespan than Osetra, Beluga, or Kaluga. Its shorter lifespan – up to 25 years – is actually one of its advantages, as it is accompanied by a correspondingly shorter maturation period and higher rate of reproduction. This fish can be found in the wild in the basins of the Caspian, Azov, Black, and Aegean Seas, as well as adjacent large rivers.
Sevruga is one of the most well-represented members of the sturgeon family, not only in aquaculture but also in its natural environment, due to its faster reproduction and wider geographic range. It accounts for more than half of all sturgeon caviar traded on the international market. Because of its abundance, it is by far the least expensive of the great caviar-yielding sturgeons. Despite being less expensive than its relatives Beluga and Osetra, Sevruga caviar delivers the same high quality, beautiful appearance, and delicate flavor that these elite species are known for.
Tiny, deliciously crunchy roe with a distinct buttery flavor are produced by this sturgeon species. The beads vary in color from catch to catch and fish to fish, varying from light gray to greenish and yellow-gray.
Sam’s Caviar Store is proud to offer only a few varieties of Sevruga caviar:
Sam’s Sevruga Caviar is often referred to as a “entry level” caviar for those who are new to this famous delicacy. Do not be misled by the small size of the grains in Sevruga caviar; as is often the case, some of the best things come in small packages.
Classic Grey Sevruga Caviar is a favorite of those looking for the best quality without spending a fortune. It has a distinct buttery, smooth flavor with a long, faint aftertaste. The grains are tiny and have a pearlescent gray envelope around them that hides their succulent contents.
We have a specially priced package of Sam’s Sevruga Caviar (2 oz.) with fresh French Blini Mini Size (a pack of 16 pcs.) and smooth, cold Crème Fraîche (7-8 oz.) for all who love a good deal, a perfect assortment for a great family dinner or a small cocktail-party.

Sevruga Sturgeon (Acipenser Stellatus), also known as Starry Sturgeon, is classified as a “critically endangered” species, with a 98 percent population loss between 1979 and 2001. The population is declining. Under Appendix II of the Convention on International Trade in Endangered Species, Sevruga sturgeons are strictly protected. Sevruga is an anadromous fish that spends the majority of its adult life in salt water before migrating to fresh water to spawn. These sturgeons can grow to be 7-12 feet long and weigh up to 180 lb. The maximum age recorded is 27 years. Females reach sexual maturity at 7-8 years of age and spawn every 3-4 years. Males reach sexual maturity at 6-7 years of age and spawn every 2-3 years. The spawning season lasts from April to September. The Caspian, Black, and Aegan Seas are home to Sevruga. Its natural habitat is sand and mud near the sea. Sevruga spends the day at the bottom and comes to the surface at night to feed. Tiny fish, mollusks, crustaceans, and worms make up the majority of Sevruga sturgeons’ diet.
