Osetra

Osetra Caviar is available at Sam's Caviar in a variety of flavors. This is the most well known of the caviar-producing species. Russian Osetra is available in gold to light amber, Golden Imperial Osetra is available in medium to large beads, and Special Reserve Osetra is available in a select flavor. Only Beluga and Kaluga Caviar, both exorbitantly priced, can compete with Osetra Caviar, which is far more accessible. Sturgeons caught in the Caspian Sea were used to harvest traditional Russian Osetra (sometimes spelled "Ossetra"). Because overfishing and poaching have decimated the natural population of Caspian sturgeons to the point of extinction, commercial use of wild-caught sturgeons is strictly regulated. The majority of the world's commercial caviar is produced in state-of-the-art aquafarms. The world's largest sturgeon-rearing farms can be found in France and Italy, as well as in Israel, with its world-famous brand "Karat."

Osetra Caviar profile

Suggested use: This high-quality product will satisfy even the most discerning customer. If you’re looking for authentic Russian Osetra, Sam’s Osetra Caviar is the best option. This caviar will add exclusivity and sophistication to any event, party, or two-person dinner. Due to the current scarcity of Beluga caviar, Russian Sturgeon Osetra is the original and only true Russian Osetra, native to the Caspian Sea, and is the World’s most renowned and awarded caviar. This is a must-have item for any high-end restaurant or wine bar that wishes to promote authentic Russian Osetra Caviar on its menu.

Note: Russian Sturgeon Osetra Caviar is classified according to size and color. The more valuable the caviar, the larger the eggs and the lighter the color. The gold color is a naturally occurring but unpredictable feature of Russian Osetra (Acipenser Gueldentsaedtii). There will be no gold colored eggs in any other “Osetra” caviar. This is why Russian Sturgeon is the most valuable of the sturgeons whose caviar is incorrectly referred to as “Osetra.”However, due to genetic variability and the inability to forcibly produce this trait, there is a limited supply of Gold Russian Osetra Caviar. Only one or two of every hundred original tins will be gold in color.

Tsar Imperial Osetra, Golden Imperial Osetra, Russian Osetra, Tsar Osetra, and Caspian Osetra are all names for Russian Osetra. Furthermore, no molecular marker has been discovered to distinguish Iranian Osetra (Acipenser Persicus) from Russian Osetra based on mitochondrial DNA analysis (Acipenser Gueldenstaedtii). So, if someone wants to buy Iranian Osetra (also known as Assetra, which is not available due to the trade embargo between the United States and Iran), they can be safely referred to Karat Russian Osetra.

Be aware: The most common substitute for Russian Osetra is a cross of Adriatic sturgeon (Acipenser Naccarii) and Russian sturgeon (Acipenser Gueldenstaedtii) that is mistakenly labeled as pure Russian Osetra.
However, there is no dissonance in calling their product “Russian,” because the farmed fish are raised from fingerlings of the original Caspian sturgeon, and their roe is prepared in pristine Malossol fashion: preserved with a small, precisely calculated amount of sea salt. There are no other preservatives, colorants, or chemical products used; when you buy our caviar, you can be confident that you are getting a delicious and wholesome natural product.
The world of gourmet food is bursting with vibrant colors in the form of exotic fruits and delicacies. Though not as vibrant, the caviar selection’s palette is subtle and refined, as befits this exquisite gourmet product. The shades of gray range from smoky pale to charcoal black, with unexpected accents of deep browns, natural golds, and subdued greens. This is the most expensive and sumptuous gourmet delicacy in the world, and the crown jewel is Russian Osetra caviar.

Only Beluga and Kaluga, which are valued in part due to their scarcity, are more valuable than Osetra, which is considered as the Golden Child of the sturgeon family. Osetra caviar covers the middle ground between Beluga and Sevruga in terms of form, scale, and taste. Because of these distinguishing characteristics, it is the world’s most sought-after and best-selling luxury product.
Color and taste distinguish various forms of Osetra caviar:
With its large to medium-sized roe, golden to dark brown in color and simply delightful to the palate with its crisp, nutty flavor, light salinity, and perfect tender texture Osetra Malossol Caviar is the best known and most widely chosen variety.

Russian Osetra Karat Caviar Amber comes from one of the world’s oldest aquafarms, an Israeli farm that specializes in raising sturgeons. “Karat” has long been recognized as the herald of sterling quality and unrivaled taste in the gourmet world. This exceptional product has an incredible color and an outstanding flavor. The bead’s firm but delicate envelope is ready to burst on the tongue and release its enticing contents.
Russian Osetra Karat Caviar Gold is also produced by Israel’s well-known “Karat” aquafarm. It is harvested from Caspian Sea Osetra fingerlings that have been bred under ideal conditions. This variety is notable for its pure golden color with a slightly brown hue. It has a distinct flavor, but it also has the traditional nuttiness and crispness that Osetra is known for. The price of this caviar reflects these distinguishing characteristics.

Russian Osetra Karat Caviar Black is also farmed in Israel. The deep black color of its medium-sized eggs is accented by subtle gold and golden brown flashes. These juicy, tender morsels have a fresh, clean, and nutty flavor.

The name Osetra Golden Imperial Caviar comes from the fact that it was once a delicacy only available to those of royal blood. Now that Golden Imperial Caviar is widely available, anyone can appreciate its distinct flavor: clean, sweet and nutty, with a satisfying crispness. With their stately golden gloss, the medium-sized grains of this caviar stand out from the rest.

The highest level of indulgence in this assortment of delicacies is Special Reserve Russian Osetra Caviar. These soft and tender eggs have a rich buttery flavor that sets this product apart from all other Osetra caviars, as selected by our own Mark Gelman to ensure the deepest satisfaction and gastronomic thrill.
We are proud to give you the best Black Caviar prices at Sam’s Caviar Store. Specific collections as well as caviar sets are available at special prices.
The IUCN Red List classifies the Russian Sturgeon (Acipenser Gueldenstaedtii), also known as the “Diamond Sturgeon,” as a “critically endangered” species that is strictly protected by CITES. In the last 45 years, the natural population of Russian Sturgeon has decreased by 90% and is still decreasing. There has been no record of any wild species being caught in the Black Sea in the last ten years, which may indicate their extinction from that area. Russian Sturgeon can grow to be 6 feet long and weigh up to 250 lb. Females reach sexual maturity between the ages of 10 and 16, while males reach sexual maturity between the ages of 8 and 13. From April to June, adult females spawn every 4-6 years and males every 2-3 years. The average lifespan is 38-48 years. Russian Sturgeon are native to the Caspian, Black, and Azov Seas, as well as their river basins. It is an anadromous fish that only migrates to freshwater to spawn. Natural habitats include shallow coastal and estuarine zones at sea, as well as deep sections of large rivers with moderate to swift current. Russian Sturgeon eats a wide variety of benthic mollusks, crustaceans, and small fish.
