The American Hackleback Caviar (Scaphirhynchus platorynchus) is among the true sturgeons and is highly valued by the real connoisseurs. Its rich and nutty taste is quite similar to Sevruga and Osetra but at the same time, it is one of the most affordable caviars as this fish starts carrying eggs already after 4 years.
The grains of Hackleback caviar are pretty small but they have a very soft cover which is protected due to manual processing.

*on some occasions Hackleback American Sturgeon caviar is substituted by higher end sturgeon caviar.
